September 25-29, 2023
5 days + warm up and follow up
Università Cattolica del Sacro Cuore - Campus of Piacenza
This intensive program on Innovation and Sustainability in Viticulture and Enology relies upon three main pillars:
1) Illustrate the added value of precision viticulture and enology techniques as modern approaches of the wine value chain that are nowadays considered essential to combine accomplishment of quality standards, production efficiency, and reduction of environmental impact.
2) Transfer the most recent knowledge and methodologies to new generation of experts that are expected to bring the wine sector into a modern scenario where digitalization will contribute at increasing economic, environmental and social sustainability. In parallel, the digital revolution will offer reliable solutions for adapting the entire wine value chain to climate change.
3) Describe the main phases of a sustainability certification of the wine value chain according to national and European standards and along the path of the farm-to-fork strategy. Describe the meaning and illustrate the methodologies required for calculating Life Cycle Assessment (LCA), carbon and water footprint of the wine industry.
All the topics will be addressed under a comprehensive and multidisciplinary approach to provide an overall view of the wine sector from grape production to wine consumption. The program will include academic seminars, description and discussion of case studies, sensory analyses sessions, field visits, and meetings with research people and industrial leaders in the following fields:
• Precision Viticulture
• Precision Enology
• Sensory analysis
• Ecology and sustainability of grape growing systems
The enrolment will open 3 July 2023 and will close 4 September 2023
